Baked Strawberry Rhubarb Dessert


You will need: an appetite for colorful, healthy, post winter food plus…..

2/3 cup of sugar (you can mix brown and white sugars)

teaspoons of cornstarch

teaspoons of ground cinnamon

Pinch of salt

1 pound of rhubarb cut into 1 inch pieces

2 cups of whole (medium size) strawberries hulled and halved

Grease a 2 qt. casserole

In a small bowl mix the sugar, salt, cinnamon, and cornstarch

Put half the rhubarb in the prepared dish

Sprinkle half the sugar mixture on top

Repeat with the rest of the rhubarb and sugar mixture

Cover the dish tightly with foil and bake at 375 degrees for 30 minutes, until the rhubarb is soft.

Stir in the prepared strawberries and bake covered for another 7 minutes.

Chill and serve over vanilla ice cream or pound cake or both!
